These simple cookies are so yummy, you’ll get more kisses than you can imagine, Irish or not! Happy St. Patrick’s Day!
Irish Flag Cookies
1 1/2 cups powdered sugar
1 cup unsalted butter, softened
1 1/2 teaspoon almond extract
1 egg
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Heat oven to 375 degrees Fahrenheit. Mix powdered sugar, butter, almond extract and egg in large bowl. Stir in remaining ingredients. Divide dough in thirds, in separate bowls. Stir in red and yellow food coloring in one to make orange and green food coloring in the other, leave one third plain. Cover each and refrigerate at least 2 hours.
On a lightly floured surface, knead then form each third into 1-inch thick rectangles the same length. Gently press the three sections together against their longest sides. Slice starting at one end, cutting 1/4-inch thick slices. Place on a lightly greased cookie sheet. Bake 7 to 8 minutes. Remove from cookie sheet to cool on a wire rack.
